Summertime is here! Because it is so hot in Florida making dinner (using the stove or oven) takes a back seat. I don’t have a huge appetite either. I have come to love making crisp fresh salads! It is now a staple in our weekly eating and I try to make salads without any meat.(again do not like using the stove) This means a quick, easy and deliciously satisfying meal. What’s your favorite salad to eat?
Here are all the ingredients you will need! Black beans, Corn, Green Beans, Carrots, Tomatoes, Green/Yellow/Red peppers, Cilantro and of course lettuce. I like using Spring mix!

Fresh fresh veggies! Adding some olive oil and salt and pepper are perfect! It keeps it light! My hubby likes putting salsa on the top of his! It keeps the fat content down and is healthy! Takes hardly anytime and its so good! Happy Cooking!
